From aeronautics to microbrewery
This former aeronautical trainer in the army chose Le Dévoluy to be closer to his family, after 17 years of service in the French army. It is with his wife Véronique Serres that they decided to settle in 2018 in the village of Coutières.
At first, a project of guest house and table d’hôtes, to echo his passion for gastronomy, but which will finally not be realized. The desire to be independent and create his own business remains, the brewery project then makes its way.
His passion for brewing was born from the difficulty to find the taste of Anglo-Saxon beers, which he particularly likes since a stay of several months spent in England. It was at this moment that the idea of creating his own beer came to his mind. His thirst to learn, coupled with a military mindset that pushes him to start over without fear of failure, leads him to realize his first successful brew in 2014, at home. Equipped with professional equipment financed by his own funds, Christophe creates his first laboratory, and embarks on creating recipes for two years. Every month, new brew tests are conducted. In a way, he carries out his market research in the field, making people discover his beers around him in order to collect opinions.
Christophe creates new recipes every month, which he produces up to 400 or even 800 bottles. It should be noted that a brew requires a month and a half to two months, from conception to release. You can find La Bure beers in the valley, at the Couttières farm, during the opening hours of the cheese factory, at Alp’Saveurs, at La Ferme du Dévoluy and at Petit Gallou in La Joue du Loup and at Ô délices des montagnes in Superdévoluy.
My real pleasure lies in the creation of new recipes and the discovery of new manufacturing processes. I enjoy sharing my passion for brewing during tastings. For me, getting involved in the local economic fabric is essential when you create your activity, that’s why I decided to join the association of producers Couleurs Dévoluy.
